Sommeliers Wanted

Sommeliers are in great demand – well, at least good ones are.  You know, the ones who drink both red and white wines and know which wines are served warm.  As the NYT is want to do, the real reason for this shortage was mentioned at the end: there are precious few opportunities to train to be wine steward and almost no nationally-recognised programmes. 

May the pachyderm suggest an apprentice system?
